Preparação
� Faz-se um refogado com as cebolas,alho, louro, pimentos e temperos.Adiciona-se o tomate, aos cubos, sempele e grainhas. Refresca-se com ovinho branco.
� A meio de estufar introduzem-se asbatatas cortadas em rodelas grossas.O peixe introduz-se quando as batatasestiverem a meio da cozedura.Rectificam-se os tempêros.
� Serve-se sobre as fatias de pãoalentejano finamente fatiado.
fIsh BrothwIth Hart'sPennyroyalIngredients (for 4 people)� 600 gr fresh fish, cut into pieces
(white sea bass, grouper, whitegrouper)
� 2 onions� 4 garlic cloves� bay-leaf� 1,4 dl of olive oil� ripe tomatoes� 1 bunch of italian parsley� Hart's Pennyroyal� green and red peppers� white wine� 4 medium potatoes� Alentejo bread (1-2 days old)� salt and pepper to taste
Method
� Sauté the onions, garlic, bay-leaf,peppers and seasonings. Add thetomatoes, diced, with the skins andseeds removed. Sprinkle with whitewine.
� Half way through the cooking, addthe potatoes, cut into thick wedges.When the potatoes are half done,add the fish and adjust theseasonings.
� Serve on slices of very thinly slicedAlentejo bread.

Arroz depombo bravoIngredientes (para 4 Pessoas)� 4 Pombos Bravos� 0,5 Kg. de Linguica� 250 gr. de Toucinho� Sal q.b� Arroz q.b.� Hortelã a gosto
Preparação
� Põe-se tudo a cozer. Quando os pombosestiverem bem cozidos, retiram-se docaldo e desossam-se. Reserva-se o caldoda cozedura.
� Coze-se o arroz no caldo da cozedurados pombos. Na ponta final, adicione acarne dos pombos, os enchidosfinamente fatiados e um ramo dehortelã.

paprika sausage)� 250 gr bacon� salt� rice� mint to taste
Method
� Boil all the ingredients together.When the pidgeons are done, takethem out of the cooking stock andremove the bones. Keep the cookingstock.
� Cook the rice in the stock. Justbefore it is ready, add the pidgeonmeat, the sausage (sliced into verythin wedges) and a bunch of mint.

lombo dePorco comamêIJoasIngredientes (para 4 Pessoas)� 600 gr de Lombo de porco� 4 dentes de alho� 4 colheres de sopa de massa de
pimentão� 4 colheres de sopa de banha� 400 gr de amêijoas� 1 dl vinho branco� 1 limão para guarnecer� salsa picada
Preparação
� Tempera-se a carne de véspera, com amassa de pimentão e o alho. Frita-se nabanha.
� Juntam-se as amêijoas, com casca, erefresca-se com o vinho branco.Quando estas estiverem abertas, o pratoestá pronto.
� Sirva com um pouco de salsa picada egomos de limão.
Pork loInwIth ClamsIngredients (for 4 people)� 600 gr of pork loin� 4 garlic cloves� 4 tablespoons of paprika paste� 4 tablespoons of pork lard� 400 gr of clams� 1 dl of white wine� 1 lemon for the garnish� chopped italian parsley
Method
� Season the meat overnight withpaprika paste and garlic.
� Fry the meat in the pork lard.
� Add the clams (in their shells) andsprinkle with the white wine. Whenthe shells are open, the dish is readyto serve.
� Garnish with chopped parsley andlemon wedges.

doce de OvosferradosIngredientes (para 6 pessoas )
� 300 g de Açúcar
� 12 gemas de ovos
� 2 dl de água
� Sumo de 2/3 limões
Preparação
� Leve a água ao lume com o açúcar edeixe ficar em ponto de pasta. Retiredo lume e deixe arrefecer.
� Bata as gemas de ovos e passe-as porum passador de rede para dentro dotacho. Vá mexendo sempre até asgemas engrossarem. Retire do lume atéarrefecerem.
� Deite os ovos-moles em tigelasindividuais, pulverize com açúcar equeime com um ferro em brasa.
� Quando ainda quente, deite o sumo delimão por cima.

� 300 gr sugar
� 12 egg yolks
� 2 dl water
� juice of 2 – 3 lemons
Method
� Heat the water with the sugar untilyou obtain «ponto de pasta», thismeans achieving Baumé 28º,Centigrade 101º, or the sugar coatsthe back of a spoon. Remove fromthe heat and allow to cool.
� Beat the yolks and sieve themdirectly into the pan with the sugarpaste. Stir continuously until theyolks thicken. Remove from theheat and allow to cool.
� Pour the egg mixture into individualramekins, dust with sugar andafterwards burn with a hot foodburner.
�While still warm, pour the lemonjuice on top.
