11SETTING UP YOUR MACHINE / PRE-HEATING

SETTING UP YOUR MACHINE

1) Refer to Important Safeguards to makesure the machine is located in a safeplace.

2) Your machine has been factory designedto operate at a specific voltage.Refer to the identification label on thebottom of your machine to make surethat the outlet you intend to use suppliesthe proper voltage and that the circuit itbelongs to is rated for the machine'spower requirements. If an extension cordis needed make sure that it also has theappropriate rating and meets or exceedsall safety standards.

3) Filling the water tank Remove the water tank cover and

carefully take the two hoses out of thetank.

Remove the water tank from themachine, rinse it thoroughly, and fill itwith fresh, cold water. We recommend using only filtered orbottled water. Never use anything otherthan cold water in your machine.

Place the water tank back on themachine and reinsert the hoses into thetank. Place the water tank cover backon the tank.

4) Plugging in your machineMake sure the power switch is in theup and off position. Also make sure

the other switches are in the up and offposition.

Make sure the outlet you are using isappropriate for the machine and thenplug the machine in.

Turn the power switch on. The switch willilluminate to indicate that the machineis on.

Be sure to prime the machine right awayusing the following instructions.

5) Priming the machine The machine must always be primed

before use and after steaming. It is also a good idea to prime themachine after filling the water tank or ifthe machine has been left on but notused for some time. Priming the machineensures that there is adequate water inthe system for its normal operation andfailure to do so could result in seriousdamage to your machine.

To prime your machine, position thesteam wand over the drip tray and fullyopen the hot water / steam knob byturning it counter clockwise.

Press the brew switch and wait until asteady stream of water flows from thesteam wand.

Allow at least 4 oz. of water to flow andthen turn off the brew switch and closethe knob.

PRE-HEATING

Before brewing espresso you will wantto pre-heat both the filter holder and thecup(s) you will use to serve your espres-so. Use the following procedure.

Make sure that the ready light is onand then insert the filter holder, withempty filter basket in place, into the brewhead of the machine. Turn the handle ofthe filter holder from left to right until itis securely in place. When you releasethe handle it will automatically springslightly back to the left. This indicates thatthe filter holder is operating properly.

Place your cup(s) to be warmed directlybeneath the two outlets on the bottomof the filter holder.

Turn the brew switch on, the pumpwill come on and after a few secondswater will begin to flow into the cup(s).

12 BREWING ESPRESSO

Allow the water to flow until the cup orcups are almost full then turn the brewswitch off.

Wait until the water finishes flowing intothe cups before removing the filter holder.

Turn the handle from right to left toremove the filter holder and then emptyany excess water from the filter basket.Let the cup(s) stand for a few momentsto absorb the heat from the water andthen empty.

Always use caution whenremoving the filter holder from

the machine as it may be very hotand could burn you.

BREWING ESPRESSO

1) What you should know first Brewing good espresso with its

characteristic thick, golden cremadepends on a number of factors comingtogether in just the right way. A goodextraction depends on fresh, good qualitywater being heated to the correct tem-perature, and then forced through finelyground coffee under just the rightpressure. When these important factorsare combined properly the resulting shotof 1 1/2 to 2 oz. of espresso will bedelivered in about 20 seconds, and willbe topped by a thick, golden brown cre-ma with a slightly marbled appearance.Fortunately for you, this machine hasbeen designed to heat the water to justthe right temperature and to provide justthe right pressure. All you have to do issupply the fresh, cold water, preferablyfiltered or bottled, and the right kind ofground coffee. Using pods makes yourjob even easier. You should use anespresso roast, which is finely ground butnot powdery. The specially designed filter

holder for your machine will work wellwith a wide range of possible grinds. However, if the grind is too fine theespresso will slowly drip from the filterholder. If the grind is too coarse theespresso will flow too quickly. In eithercase, the crema will not develop properlyand the espresso will not be satisfying. When properly extracted, the espressowill flow in two thin, golden streams fromthe filter holder into your cup. It may takesome experimentation, but once you findthe right espresso roast for your taste -ground to the right consistency, you willtruly appreciate the advantage of makingreal Italian espresso in your own home.

2) Brewing Espresso Make sure the larger filter basket is

in the filter holder and then add onemeasure of ground coffee for one shotof espresso or two measures for twoshots. Be sure to wipe any excess groundcoffee from the rim of the filter basket toavoid the possibility of leakage. Use thebottom of the measuring scoop to leveland lightly tamp the grounds in the filterbasket.

Make sure you have followed thepre-heating procedure and that the readylight is on. Insert the filter holder into thebrew head. Turn the handle from left toright until it is securely in place. Whenyou release the handle it willautomatically spring slightly back to theleft. This indicates that your filter holderis operating properly.

Place your pre-heated cup(s) directlybeneath the two outlets on the bottomof the filter holder.

Press the brew switch, the pump willcome on and after a few seconds espres-so will begin to flow into the cup(s).

13BREWING ESPRESSO - FROTHING MILK FOR CAPPUCCINO

Let the espresso flow until you haveobtained the desired amount. Turn offthe brew switch and wait for the espres-so to finish flowing from the filter holderbefore removing the cups(s).

Always empty the used grounds from thefilter holder after preparing espresso.Never knock the used grounds out ofyour filter holder, we recommend thatyou scoop them out for disposal.

Always use caution whenremoving the filter holder from

the machine as it could be very hot.Never attempt to move or removethe filter holder from the machine

when brewing.

3) Brewing Espresso with Pods Remove the larger filter basket from the

filter holder. Place the pod adapter (13)into the filter holder with its concave sidefacing up. Then place the pod filterbasket into the filter holder.

Insert the filter holder into the brewhead. Turn the handle carefully from leftto right until it is secure. When yourelease the handle it will automaticallyspring slightly back to the left. Thisindicates that your filter holder isoperating properly.

Place your pre-heated cup directlybeneath the two outlets on the bottomof the filter holder. Remember, pods areintended to produce only 1 serving ofespresso.

Press the brew switch, after a few secondsespresso will begin to flow into the cup.Turn off the switch when you haveobtained the desired amount of espres-so. Allow espresso to finish flowingbefore removing the cup.

FROTHING MILK FOR CAPPUC-CINO

1) What you should know first Frothing milk provides two of the three

essential components needed for greatcappuccino. By frothing you create thecharacteristic thick, foamy topping forcappuccino and the milk remaining in thepitcher is steamed to just the right tempe-rature to blend perfectly with a shot ofespresso. Only when these three elementsare combined in equal portions can youhave a true cappuccino. Your machine, with its special "pannarello" frothingattachment (16) , makes frothing milk easy.Keep in mind that the milk should besteamed to around 160 degreesFahrenheit and to make sure it reachesthe proper temperature you will want touse a cooking thermometer for at leastthe first few times. An appropriatethermometer can be purchased at almostany local grocery store, supermarket or

Place the pod inside the filter. Make surethat the edge of the pod does not extendover the rim of the filter basket.

kitchen supply store. To obtain the bestfoam when frothing be sure to use onlyskim or low fat milk. In order to make thebest cappuccino it is a good idea to froththe milk before brewing the espresso, thatway the espresso does not become coldwhile you froth. Use the directions belowfor frothing milk with your machine.

2) How to use your machine forfrothing milk

Make sure that the machine is primed.Press the steam switch, the switch will illu-minate to indicate that the machine is insteam mode. If the ready light on the brewswitch is already on, it will go off whilethe machine heats to the proper tempe-rature. When the ready light comes backon the machine is ready to make steam.

Position the steam wand over the driptray, and slowly open the hot water/steamknob. Allow excess water to be purgedfrom the system, after a few seconds theflow will change to steady steam. Thenclose the knob.

Caution: When purging theexcess water, the steam wand and

water will be very hot. Do not touchthe steam wand with your bare skinand keep hands away from thestream of hot water to avoid beingburned.

Fill your frothing pitcher up to 1/3 full ofcold milk, or use 4 oz. per servingneeded. Fully immerse the tip of thepannarello into the milk to be frothedbut do not allow the tip to touch thebottom of the pitcher.

Open the knob slowly and allowsteam to froth the milk and heat it to theproper temperature. The pannarello

makes frothing quick and easy. Continuefrothing until you have achieved thedesired amount of foam and the milk hasreached the proper temperature. Turn offthe steam switch and then close the knob.

After steaming be sure to prime themachine. The boiler temperature mustalso be lowered before brewing espres-so. To accomplish both tasks, point thesteam wand over the drip tray and thenopen the hot water/steam knob. Pressthe brew switch and allow hot water toflow until the ready light goes off.

Caution: When priming themachine after steaming, the

steam wand and water will be veryhot, do not touch the steam wandwith your bare skin and keep handsaway from the stream of hot waterto avoid being burned.

When finished priming you will wantto wipe clean the steam wand using adamp cloth. It will also make subsequentcleaning easier if you immerse thepannarello and steam wand into acontainer of water. Again, use cautionwhen handling the steam wand andpannarello to avoid being burned.

DISPENSING HOT WATER

Your espresso machine can also be usedto deliver hot water for tea or other hotbeverages.

Make sure that the ready light is onand place a container under the steamwand. Open the hot water / steam knoband then press the brew switch. When you have obtained the amount ofhot water that you need, turn off the brewswitch and close the knob.

15CLEANING AND MAINTENANCE - DESCALING

CLEANING AND MAINTENANCE

Keeping your machine clean and wellmaintained will help ensure that itcontinues to work properly for a longtime to come.

Make sure that the machine is turned offand unplugged before doing anycleaning or maintenance.

screen is held in place on the brew headby a screw that must be removed beforetaking the filter screen off for cleaning.Soak both filter basket and filter screenin hot soapy water, and then use yourcleaning brush to remove coffee residuethat has built up. The small holes in thefilters must be kept clear for yourmachine to operate properly. Make surewhen re-installing the brew head filterscreen that the smooth side faces down.

The brew head gasket, which providesthe seal when the filter holder is in place, should also be cleaned regularly. Thisgasket is located between the filter holderring and the brew head filter screen. Usewarm soapy water and your cleaningbrush to loosen coffee residue on thegasket, then insert a damp cloth into thechannel to finish cleaning.

DESCALING

During the normal course of operation, and even when the machine is not used, mineral deposits commonly referred toas limescale will accumulate inside yourmachine. To remove these deposits andto keep your machine operating properlyyou will need to descale the machineabout every 3 to 4 months.

To descale the machine, use only asolution which is made for espressocoffee machines. These descalingsolutions are intended to be mixed in theproper proportions with a full tank ofwater.

Add the descaling solution to a fulltank of water and place the tank on themachine. Turn on the power switch andthen prime the machine.

Allow the machine to heat to operatingtemperature and then run one quarter

The filter holder can best be keptclean internally by flushing it on themachine when finished brewing. Afteryou are done preparing espresso, repeatthe same procedure used for pre-heatingthe filter holder, allowing about 4 oz. ofwater to flow through.

You will need to periodically removethe filter basket from the filter holder andthe filter screen from the brew head ofthe machine for cleaning. The filter

Donot run descaling solution through thefilter holder. Wait 10 to 15 minutes andthen run another quarter tank throughthe machine in the same manner. Letstand for 10 to 15 minutes again.

Repeat process until the water tank isalmost empty. Do not run the machinewhen water tank is completely empty.

To flush the machine, rinse the watertank thoroughly and fill it with fresh, coldwater. Run the full tank of fresh waterthrough the machine alternating betweenthe steam wand and the brew head untilthe tank is almost empty.

ADDITIONAL NOTES ABOUTYOUR ESPRESSO MACHINE

Occasionally water may drip from thebrew head of your machine while theboiler is heating. This is a normaloccurrence, but make sure to keep yourhands away from this water as it may bevery hot.

The ready light may periodically go offand come back on when you are usingthe machine. This is a normal part ofthe heating cycle of your machine.
