QUALIDADE SENSORIAL DE CACHAA DE ALAMBIQUE E DE AGUARDENTE DE CANA: DIFERENCIAO PELA TCNICA ANLISE DE PERFIL LIVRE.

INTRODUOA entrada da aguardente de cana e, principalmente, da cachaa de alambique em mercados mais exigentes j est demandando maior grau de conhecimento tecnolgico da qualidade do produto.A anlise sensorial uma disciplina cientfica utilizada na identificao, medida, anlise e interpretao das propriedades sensoriais (atributos) de um produto que so percebidas por meio dos cinco sentidos: viso, olfato, tato, gosto e audio.O Perfil Livre um dos mais recentes mtodos sensoriais descritivos, no qual o provador tem liberdade de usar os termos descritivos que ele achar mais apropriados. Assim, praticamente elimina-se a etapa de treinamento da equipe de provadores, reduzindo-se drasticamente o tempo necessrio para a realizao das anlises. A aplicao da tcnica de Perfil Livre tornou-se possvel a partir do desenvolvimento da Anlise Generalizada de Procrustes (AGP), por Gower, em 1975.A AGP aproxima as configuraes de cada provador a uma configurao mdia, ou consenso, maximizando as similaridades geomtricas, por meio das operaes de translao, rotao/reflexo e troca de escala isotrpica ou auto-escalonamento.OBJETIVOSMATERIAIS E MTODOS REFERNCIASCONCLUSOCaracterizar a qualidade sensorial da bebida procurando diferenciar entre cachaa de alambique, aguardente industrial, aguardente padronizada e cachaa informal, pela tcnica anlise de perfil livre.-CARDELLO, H. Para a seleo de provadores, pelo teste triangular, foram utilizadas duas amostras: uma marca de aguardente industrial com graduao alcolica de 48 GL e a mesma marca diluda com gua destilada para 40 GL. Foram apresentados 8 trios de amostras (uma diferente e duas iguais) a cada provador.No teste preliminar, para avaliao do desempenho dos julgadores, foram utilizadas amostras de 5 marcas de aguardente, sendo duas industriais, duas de alambique envelhecida e uma de cachaa de alambique padronizada no-envelhecida.Para a anlise sensorial descritiva final foram utilizadas amostras de 30 marcas de aguardente de cana, sendo 7 marcas de aguardente de cana industriais, uma de cachaa de alambique informal, 14 marcas de cachaa de alambique, sendo 8 envelhecidas e 6 de cachaa no envelhecidas e 8 marcas de aguardente padronizada.As marcas foram selecionadas por sorteio de um conjunto de marcas disponveis e tambm pela convenincia em adquirir as amostras.As etapas de treinamento dos julgadores, seleo de termos descritores e criao das escalas de medidas dos descritores foram realizadas no Laboratrio de Anlise Sensorial do DTA-UFV, seguindo metodologia recomendada para a Anlise de Perfil Livre. A seleo de termos descritores e a montagem das escalas sensoriais, para cada julgador das equipes, seguiram a metodologia de lista prvia (MOSKOWITZ, 1983), a partir dos termos j desenvolvidos em pesquisas anteriores com cachaa de alambique e com aguardente de cana, no Brasil (CARDELLO & FARIA, 1998; 1999; 2000; CARVALHO, 2001; FURTADO, 1995; YOKOTA, 2001). As amostras foram servidas de forma mondica, em taas apropriadas para avaliao de cachaa, desenvolvida conforme modelo da AMPAQ (Associao Mineira dos Produtores de Cachaa de Qualidade). As taas foram cobertas com vidro de relgio durante o perodo de teste sensorial, para reduzir a evaporao. Cada provador avaliou 30 marcas, em cerca de dez sesses, sem repetio.No teste triangular foram aprovadas 15 pessoas, que tiveram 62,5 % de acertos ou mais. Somente 8 continuaram participando do experimento. O nmero de termos descritivos utilizados pelos julgadores sensoriais variou de 11 a 14.Foi utilizado o programa Senstools da OP & Research verso 2.3 para a anlise dos dados .A anlise dos dados do teste definitivo com 30 marcas foi feita empregando-se as duas primeiras dimenses, responsveis pelas maiores varincias. O total da varincia explicada foi de 42,71 %. Para avaliar a eficincia da equipe foram consideradas a configurao dos provadores (Figura 1) e as varincias residuais (Figura 2).

A varincia em azul relativa dimenso 1 e a em verde relativa dimenso 2.A Figura 1 mostra que os provadores 2, 6 e 8 foram os que mais se afastaram da configurao consenso, o que apoiado pelo fato de apresentarem maiores varincias residuais (Figura 2). Isso indica discordncia com a equipe.Os atributos que mostraram maior correlao para as duas dimenses esto descritos na Tabela 1. O critrio utilizado na seleo foi considerar significativos os atributos com correlao, em mdulo, superior a 0,50. A dimenso 1, responsvel por 37,11 % da varincia, foi correlacionada principalmente com os atributos de colorao amarela, aromas de madeira e baunilha, sabores de madeira inicial e residual, separando as amostras quanto a esses atributos. J a dimenso 2 (5,55 % da varincia) foi correlacionada com gosto doce e sabor alcolico inicial, separando as amostras quanto a esses atributos.RESULTADOS E DISCUSSOTabela 1: Atributos com maior correlao (r < -0,50 ou r > 0,50) para cada provador na avaliao das amostrasNem todas as amostras foram bem discriminadas (Figura 3). Do lado direito da Figura 3 houve predominncia de cachaas de alambique envelhecidas. Apresentaram maior intensidade para os atributos de colorao amarela, aromas de madeira e baunilha, sabores de madeira inicial e residual, j que esses atributos apresentam correlao positiva com a dimenso 1. Do lado esquerdo da mesma figura h o predomnio de aguardente industrial, aguardente padronizada, cachaa artesanal no-envelhecida e uma marca de cachaa informal e ocorreu o oposto em relao aos atributos anteriormente citados.As amostras alocadas nos terceiro e quarto quadrantes da Figura 3 (na parte inferior) apresentam maior intensidade para os atributos de aroma alcolico, sabores alcolicos inicial e residual e gosto amargo, pois apresentam correlao negativa com a dimenso 2; e menor intensidade para o atributo viscosidade, que apresenta correlao positiva com a dimenso 2. O oposto vale para as amostras alocadas nos primeiro e segundo quadrantes.A amostra A30 (aguardente industrial) foi a que menos apresentou os atributos correlacionados com a dimenso 1 e que mais apresentou os atributos correlacionados com a dimenso 2. Enquanto que a amostra A25 (cachaa artesanal envelhecida) foi a que mais apresentou os atributos correlacionados com a dimenso 1.De forma geral, as amostras foram melhor separadas pela dimenso 1.A amostra A3 (aguardente padronizada) foi a que apresentou menor varincia residual, ou seja, foi melhor discriminada pelos provadores e a que apresentou maior varincia residual foi a A28 (cachaa de alambique envelhecida).Figura 3: Configurao consenso das amostras. A1-A30: amostras de cachaa.A tcnica de Perfil Livre, associada Anlise Generalizada de Procrustes permitiu a caracterizao e discriminao sensorial das amostras estudadas, principalmente em relao aos atributos de colorao, aromas de madeira e baunilha e sabores de madeira inicial e residual. No entanto, para um resultado mais satisfatrio as avaliaes deveriam ter sido feitas com repetio e com nmero menor de amostras.
